Our beef jerky starts with our delicious locally raised cattle. Jerky uses only the leanest cuts of beef, and we make two distinctly different types.
1. Whole Muscle Jerky
These delicious jerky strips are sliced from extra lean beef cuts across the grain of the meat to yield a meaty, tender chew.
2. Ground Jerky
Ground from extra lean beef cuts, we mix the spices, salt, and cure in, and use a special “horn” (stainless steel forming tube with a flat spout) to press the jerky mixture onto a smoking screen. All of our jerky types and flavours are naturally hickory smoked. We perform a water activity test on every batch to ensure the utmost in food safety.
